Vegan Alfredo

A few weeks ago my friends and I got together for another little potluck dinner before the semester ended. We all have diet limitations, so we decided to make “Vegan Alfredo” that was okay for all our crazy diets!

Vegan Alfredo

*Serves 2

  • 1 avocado
  • Handful of fresh basil (we used dried)
  • 2-3 cloves of garlic
  • Juice of 1/2 a lemon
  • 1 tsp. sea salt
  • 1/2 tsp. freshly ground black pepper
  • 2 servings of cooked pasta
  • Garnish of lemon zest and black olives (optional)

In a blender or food processor, blend the avocado, basil, garlic, lemon juice and salt and pepper until smooth. Mix the sauce into the cooked spaghetti. Garnish with lemon zest, freshly ground black pepper and olives if desired.

Vegan Alfredo

I was actually surprised at how good this turned out. I’ve had avocado pasta sauce before but it wasn’t very good. The combination of lemon juice, garlic and basil was just right in this recipe. It was also quite filling, so a little goes a long way!
