Turkey & Carrot Quiche (Paleo)

The last few days have been about all things Paleo, so I thought I’d continue that trend by sharing a delicious Paleo recipe! This recipe comes from The Paleo Solution and is ideal for breakfast. The first time I tried this I thought it would be gross eating meat for breakfast, but it turned out to be delicious and totally manageable!

Turkey & Carrot Quiche

  • 1/2 lb ground turkey
  • 1 cup shredded carrots
  • 6 omega-3 eggs
  • 1/2 cup beef broth
  • 4 Tbsp. fresh parsley
  • 1/2 tsp. coriander
  • Mushrooms (optional)

Brown the turkey in a skillet over medium heat. Meanwhile, shred the carrots. Crack the eggs into a bowl and whisk well. Add the meat when done, carrots and all of the remaining ingredients. Mix well.

Grease a 9″ square baking dish. Pour in mixture and bake at 350F for 20-30 minutes. Quiche is done when the center is firm and a knife pushed into it comes out clean.
