Chia Pudding

Yesterday I introduced you to these tiny but powerful seeds, called “chia seeds.” I talked about some ways to incorporate them into your diet, including making a pudding with them. The most awesome thing about making chia pudding is that you can flavour it however you want!

Here is the base recipe:

Basic Chia Pudding

Serves 1

  • 3 Tbsp. chia seeds
  • 1 cup milk/water/juice/coconut water/some kind of liquid (I typically use milk because it gives it a bit more flavor and substance).

Stir and let sit in the fridge overnight. (I find that giving it another good stir an hour or so after first mixing helps get all the seeds that might be stuck to the bottom and wouldn’t otherwise gel-up). In the morning, simply stir in your desired flavorings and enjoy!

Here are some flavouring ideas:

Fresh Fruit Chia Pudding

  • *This one tastes better if you make the pudding with some kind of flavoured milk (almond or coconut)
  • Basic chia pudding (see above)
  • 1/2 cup fresh fruit (I typically use mixed berries for a variety of flavors!)
  • 1 tsp. maple syrup

AB & Banana Pudding

  • Basic chia pudding (see above)
  • 1 sliced banana
  • 1 Tbsp. almond butter
  • Dash of cinnamon

*I came up with this idea up on the spot the other morning and it was totally delicious. Just like a PB&B sandwich but in a pudding. YUM!

Peanut Butter Chocolate Chia Pudding

  • Basic chia pudding (see above)
  • 1 tsp. cocoa powder
  • 1 tsp. honey OR maple syrup
  • 1 Tbsp. your choice nut butter
  • 1 tsp. shredded coconut (optional)
  • 1/4 cup fresh berries (optional)

*I tried this one this morning and it was AMAZING! Although in my opinion you can ever go wrong with the combination of PB and chocolate! 😉

Pumpkin Chia Pudding

  • Basic chia pudding (see above)
  • 1/4 cup pumpkin puree
  • 1 tsp. cinnamon
  • Dash of nutmeg
  • 1 Tbsp. maple syrup (optional)

*I haven’t tried this one yet but I definitely will soon. Fall is here and that means all things pumpkin!

Blueberry Chia Pudding

  • Basic chia pudding (see above)
  • ¼ cup blueberries
  • ½ tsp. cardamom
  • ¼ tsp. cinnamon
  • ¼ tsp. vanilla extract
  • 1 Tbsp. maple syrup (optional)
